Cherry Gem Planked Brie

This gorgeous planked Brie recipe is a jewel of a backyard appetizer to fitfully welcome the summer and your guests. Beautifully presented with Cherry Gem and smidgen of an herb of your choice. Bon appetite!!

Ingredients:
  • 2 x 4½ oz small Brie cheese wheels
  • ½ pint fresh cherries halved
  • ½ cup Cherry Gem
  • chopped fresh (rosemary, thyme or fennel) and freshly ground pepper
  • BBq Grilling Plank (oak, maple preferrable) soaked in cold water for at least 1 hour. Follow safety instruction on planlabel for proper usage and handling
Directions:

1. Place the Brie wheels evely spaced on a pre-soaked plank.

2. In a medium bowl, combine the fresh halved cherries, Cherry Gem, fresh herb and seaon to taste with freshly ground papper.

3. Spoon the berry mixture evenly on top of the wheels of the Brie. Preheat the grill to medium-high (230 degrees celsius). Place the planked Brie on the grill and close the lid.

4. Bake for 10 - 15 minutes. checking frequently to see that the plank has has not caught fire. If it does, reduce heat and spray flames with water.

5. Carefully open lid and check the cheese. it is ready when the side sare bulging and the rind is goldden brown.

6. Take care not to leave it until the cheese burst or the liquid insides will run off the plank and into the fire. Remove planed cheese from frill.

Serve with freshing baked and crusty baghette.
